Potato Salad
(for cat, cause mine is better than everyone elses, but you guys can post your recipes too)

sorry it's in picture form, but i don't want to type it out
follow the hand written instructions for best results

Potato, bacon & egg salad
Cooking Time
15 minutes
Ingredients (serves 6)
- 1.5kg chat (small coliban) potatoes
- 4 eggs
- 2 tsp olive oil
- 200g bacon rashers, trimmed, cut into thin strips
- 2/3 cup (170g) whole egg mayonnaise ( or any good mayo)
- 1/2 lemon, juiced
- 1/3 cup chopped fresh dill (instead of dill, Use shallots or green peppers)
- Salt & freshly ground pepper
Method
- Place the potatoes in a large saucepan and cover with plenty of cold water. Bring to the boil. Boil for 10-15 minutes or until tender. Drain well and set aside to cool.
- Meanwhile, place the eggs in a small saucepan and cover with cold water. Bring to the boil. Reduce heat to medium and boil for 3 minutes. Peel eggs.
- Heat the oil in a frying pan over a medium heat. Add the bacon and shallots and cook, stirring for 7-8 minutes or until golden. Drain well on paper towel.
- Whisk the mayonnaise, lemon juice, salt and pepper together. Cut the potatoes into halves or quarters. Chop the eggs.
- Place the potatoes, bacon and dressing in a bowl. Toss gently to combine. Add the egg and toss to combine. Serve.

I'm going to copy all the recipes for potato salad, because all seem to vary slightly, so should be fun to try them all. Will let you know how I get on.
Maybe this forum might just be more interesting than I thought, if we can keep the trivia threads down.

 I think I'm gonna try this one... you wouldnt' happen to know the calories would you??? and what the hell is a chat  Am I supposed to talk up the potatoe before I eat it  ~ giggle~

Yes, talk dirty to it for the best results.
A chat is a small (baby) potato.
Sorry I dont know what the calories are, I will look back on that site and see if it says.
Edit:
I couldnt find the calorie info for this dish.
To make it a little bit healthier, you could use low fat, low cal mayo and lean bacon.

My mum made this one the other night - I liked it.
INGREDIENTS- 5 cups peeled and cubed potatoes
- 3 eggs
- 1/3 cup lemon juice
- 1/4 cup vegetable oil
- 2 teaspoons white sugar
- 1 1/2 teaspoons seasoning salt
- 1 1/2 teaspoons Worcestershire sauce
- 1 teaspoon ground mustard
- 1/4 teaspoon ground black pepper
- 1/2 cup mayonnaise
- 1/4 cup chopped green onions
- 1/3 cup chopped celery
- 3 tablespoons chopped fresh parsley
DIRECTIONS- Bring a large pot of salted water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, and transfer to a large bowl.
- Place eggs in a saucepan, and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. Peel, chop, and add to potatoes.
- In a small bowl, combine lemon juice, oil, sugar, seasoned salt, Worcestershire sauce, mustard powder and black pepper; mix well. Blend in mayonnaise. Pour lemon dressing over potatoes, and stir to coat.
- Mix in green onions, celery, and parsley. Refrigerate for at least 2 hours before serving.
