Ideas please!
I think this is the right place for this thread. I've been experimenting trying to make vegetable more interesting up until just over a year ago I was a vegetarian (no jokes about cannibalism please). I kinda adapted this idea from a couple of friends who suggested it. I cut carrots up pretty much into sticks and do the same with parsnips, after putting those in a china baking dish I crush a clove of garlic and mix it into the carrots and parsnips. I also use diced swede, cut up a couple of sticks of celery head, tail, peel then cut an onion in half add a couple of tomatoes sprinkle sage over the top then cover with aluminum foil then slow cook them in the oven for one to two hours. They basically cook in their own juices any ideas about other veg I can use I'm thinking about using peppers as well but I need some fresh ideas.

One easy idea for vegetarian meals are stir fries, and the possibilities are nearly endless, and it only takes the time for rice to boil to make.
For example, thinly slice some peppers, red onions, tomatoes, carrots and two cloves of garlic, throw in a teaspoon of chilli and oregano, and fry in a tablespoon of olive or sesame oil. Then once cooked add a dash of soy sauce for bit more flavour (that bit's optional), serve on a bed of boiled rice. If you don't like plain rice, just add a bit of ginger and cumin before cooking to give a slightly sweet and spicy taste to match your stir fry.

That sounds good Mike I'd have to cut out the chilli though Chloe's not a spiced food fan.  I'm not a veggie now but stir fry would go with pretty much anything it's a challenge to get kids to eat vegetables even at three she has so many likes and dislikes. But thanks Mike I;ll make a note of it.

Any herb can take the place of the chilli, and if you want meat in it just add some chicken, lamb or beef as you fry, just make sure with the chicken that it's white all the way through, lamb and beef can still be pink inside, that's down to personal taste.

Morningstar farms makes some amazing vegitarian friendly meat replacements...from veggie "chicken" nuggets to veggie "ground beef".

I'm pretty fickle with meet it has to be just right Karl will eat steak medium rare but I like it cooked. if it's got blood its not cooked I know you have to be careful with chicken though Mike. I made a note of it I'll try that sometime TY

Also I noticed you mentioned trying things with peppers. Have you ever thought about stuffing them?
Cut the top off the peppers and scoop out the seeds. Then use any filling you like, I like couscous, simply follow the instructions for cooking it, mix with some peas, carrots and diced tomatoes, fill the pepper to the slice and add a dash of soy sauce or oil to add moisture, put the top back on and roast for about 20 minutes, or until the skin starts peeling. Serve with grilled chicken, or pan fried steaks.
You can also stuff with rice, or even just the same stuffing you use for a roast chicken.

I've had stuffed peppers yea Mike but I never thought about doing it though. I have never actually made them but I'll try that one I personally love peppers if I use the carrots and peas etc I know Chloe will eat some of it. The couscous now I wouldn't mind that and I think Chloe will eat that too.
