Summer Soups
Anyone have any favorite soups to make in the summer? I really like cold soups since it's so hot out. I saw a recipe for a cold cucumber soup in More Magazine that I've been meaning to try. Has anyone ever tried it?

i'm not a huge soup person, but i have a great suggestion for soups in general
don't use cream
add in potatoes instead
they'll get nice and fluffy
it's super filling and a lot less fattening

Thats a good idea! Yeah the cucumber soup from the article didn't call for cream, but yogurt instead, which is a lot better for you.

it won't work for all soups, but it can be used in a lot
out of all the soups i've had, the soup from this place i get to eat has always been the best, and it's always been vegan
it's so light and fluffy yet extremely filling

Thats good to know. Are you vegan? My roommate in college was and she shared a lot of good recipes with me, although I am not vegan, or vegetarian for that matter. She was also into sustainable food. The article that I found the soup recipe from was actually focused on eating locally, and the soup was something that the author tried at a local farmer's market. It's always great to support local farmers.

I can't have my soup cold. Dennys makes a really great chicken noodle soup and my favorite soup of all time would have to clam chowder soup. I normally add some chopped up onions and half a cup of chopped up imitation crab to one can of campbells chunky clam chowder soup. It's enough for 2 or 3 days.

hmm...i dont really like soup, but cold soups r good for the summer.

i'm definately not vegan, but i know a few
it's nice for them to have a filling dish option when they go out to dinner at that restaurant
i just like that the soup isn't very fattening, 'cause then i can eat lots of it

I cant have cold soups. Its the same with cereal and cold milk, I only have it with warm milk. But I do like various soups, mainly wanton soup, oxtail or cowheel soup and pumpkin soup.
