i've never been to olive garden



good tip if you're making it though- soak the chicken in buttermilk for at least an hour before you bread and bake it. it'll get it nice and moist

Lol I have been cooking in Italian retaurants for like freakin 11 years and never not one time have i heard of soaking chicken in buttermilk?
Its all in the the bread crumbs and red sauce.Provel is the best for a chicken parmesan and parmesan.
A boneless chicken breast will always stay moist if you fry it right.Doesnt hurt to pound it out lill too!

a) you shouldn't be frying the chicken
b) if the chicken is too thin (which means it can dry out pretty easily) or not of good quality in the first place, that's a way to improve it

normally i would assume that he meant bake instead of fry, but he said he's been cooking for 11 years, so i'd expect that he knows the difference by now

if you dont do an inital frying of the breaded chicken.. how does it get crispy ? i fry mine first to get the breading brown.. then bake it slow with the tomato sauce.. covering it with foil.. add the cheese just a bit before serving....

and yeah olive gardens is ok.. but mine is better.. and ive been cooking since i was a kid and have worked as a cook ...

it can get crispy in the over when you use aluminum foil. I don't like mine rally crispy, or you can just coat it with bread crumbs.
