"Patton", although that's really more of a character study than an actual war movie
I'm also really starting to like "The Thin Red Line" alot
And "Schindler's List" (maybe not an actual war movie either, but still....) and "Saving Private Ryan" are very good too

I thought the thin red line was pretty good and also the band of brothers series was ok as well.
